crockpot cooking

I love my crockpot. I don’t know why I didn’t buy one sooner. I don’t know how I lived without one for so long. If you don’t have one, I suggest buying one.

Cooking a good healthy meal when you work full time and have a very rambunctious 2 year old is a serious challenge. But the crockpot saves my butt. Just this week we had 2 great meals that I cooked in the crockpot and they are healthy meals, not just stews and meat smothered in cream of something soup.

Tonight’s meal really pushed me over the edge…I made roast chicken that was the best chicken I have ever made. Roast chicken should be simple to make but for some reason I’ve never mastered it. Maybe because my oven isn’t great, I don’t know. But this morning I washed the chicken, used like a tablespoon or two of minced garlic, a little kosher salt, and some salt-free parsely heavy herb seasoning. Stuck the chicken in the crockpot, breast-side up on a few balls of tin foil, set it for 8 hours on low and came home to a beautiful bird that was so moist the chicken fell off the bone. The munchkin devoured it.

I also really love to make brisket in the crock-pot. It was made for brisket. Coat it with some garlic and kosher salt, brown it lightly in some oil, place cut up onion rings, celery, carrots and parsnips in the bottom of the crockpot and place the brisket on top. Slow cook for 9 hours, stick it in the fridge so it can be sort of new left-overs (cooking overnight is best) and perfection!

This was a great buy. Anything to make my life a little easier really helps!
