menu for the week of December 1st

The week after Thanksgiving and the week before Hanukkah. It’s a week of simple foods.

Monday – Burgers w/sweet potato fries
Tuesday – Chicken with olives & tomatoes (below)
Wednesday – pasta
Thursday – Crockpot lentil soup
Friday – Chicken with 40 cloves of garlic
Saturday – out

Here’s the chicken recipe. I’m going to have to cut it in half as the recipe serves more then I need, but this was one of the dishes that we had at Rosh Hashana and it was mighty tasty. Once I figure out my changes, perhaps I’ll post them (if the dish turns out well).

Chicken with Olives
* 2 tbsp olive oil
* 1 large onion, chopped
* 2 1/2  lbs chicken pieces
* salt and pepper to taste
* 6 large garlic cloves, minced
* 1 jalapeno pepper, chopped
* 1/4 cup chopped fresh cilantro or italian parsley
* 2 28oz cans tomatoes, drained and chopped
* 1/4 tsp hot red pepper flakes
* 1/2 tsp ground cumin
* 1/2 cup water
* 3/4 cup pitted green olives
* several drops of fresh lemon juice

1. Heat oil in large stew pan. Add onion & saute over medium heat about 5 minutes or until softened. Add chicken pieces, sprince with pepper, and saute with onion, turning chicken pieces often, about 5 minutes or until onion begins to brown.

2. Add garlic, jalapeno, and half the cilantro to pan and saute a few seconds. Stir in tomatoes, pepper flakes, cumin and water. Bring to a boil. Cover and simmer over low heat 45-50 minutes or until chicken is tender. Skim fat from sauce.

3. Add olives and 1 tbsp cilantro to sauce and cook over low heat for 5 minutes. Adjust seasoning; add lemon juice, if using. Serve hot sprinkled with remaining cilantro.
