mmmm….cheese

Bookclub has become my sort of once a month place to try out new recipes. This month, a few of us were having a cheese fest (we do that a lot, work is stressful) and somehow baked brie came up in the conversation. That of course got me thinking and I made the most wonderfully simple baked brie. I didn’t take a picture, but there is one from allrecipes.com which is where I got the original inspiration.

All you need is a wedge of brie, a sheet of frozen puff pastry shell, an apple, a sweet onion and butter. Heat the oven to 400. Peel and slice the apple, slice maybe half of a small onion, and saute them in a pat of butter. Place the brie on the puff pastry, cover with apple/onion mixture, pinch shut and brush some melted butter on top. Stick in the oven for 20 minutes or until golden. mmmm…..
